Serves 10 people

For the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Drink (makes 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Place the listed components in a pot, heat until it reaches a light boil, mixing so the sugar melts. Next, take off the stove allowing it to cool down completely. Pour into a clean bottle, close it and store in the refrigerator, it can be stored for around four weeks.

To make Premix: Mix the specified liquid ingredients into a large bottle, leave to sit for one hour, then filter it best through a fine cloth, making it completely strained.

To serve: Measure 85ml of the batch mix into your cocktail shaker filled with ice, and agitate gently for one minute to cool it down. Pour into a frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch by giving it a light spray of mandarin oil above the glass.
